Plum clafoutis
A warm baked plum dessert with a light, custardy batter, baked until golden and soft. Delicious to finish with icing sugar and served with cream.

- teaspoon - 5 ml
- dessert spoon - 10 ml
- tablespoon - 20 ml
- glass - 200 ml
Preparation
Step 1
Preheat the oven to 180°C.
Step 2
Pour the milk, cream and vanilla into a saucepan and bring to the boil. Let it boil for 1 minute, then remove from the heat and set aside to cool.
Step 3
Place the eggs and sugar in a bowl and whisk together until pale, light and fluffy. Gradually fold in the flour, a little at a time, until well incorporated.
Step 4
Once the milk and cream mixture has cooled, pour it into the egg mixture, whisking gently to combine. Set the batter aside.
Step 5
Put a little butter into an ovenproof dish and place it in the oven until the butter is melted and foaming. Add the plums and brown sugar and bake for 5 minutes. Remove the dish from the oven, pour over the batter and scatter with flaked almonds, if using.
Step 6
Return to the oven and bake for about 30 minutes, until the pudding is golden brown, set on top, but still light and soft in the centre.
Step 7
Dust with icing sugar and serve immediately with cream.
