Blend the plantains until they form a smooth, creamy base.

Transfer the mixture to a bowl and stir in the milk, lime juice, and vanilla, mixing until fully incorporated. Set aside.

In another bowl, whisk together the flour, cornmeal, baking powder, baking soda, and salt.
