Pine Syrup (Pine Honey) from Pine Shoots
An excellent way to support well-being without any chemicals! Pine syrup (pine honey) made from pine shoots is used for bronchial and lung ailments, airborne infections, and colds. It is not very thick, has a beautiful yellow color, and a very pleasant pine aroma.

Preparation
Step 1
How do you make pine syrup, or pine honey, from pine shoots? Young pine shoots should be collected in spring, when they have started growing but are not yet covered with young needles. It is best to do this in a young pine forest. Depending on the region, pine shoots are collected in May or June. Do not tear off shoots from the tops of the trees. Let the tree grow normally. Cut the shoots from side branches. Do not cut off all the shoots you can reach.
Step 2
It is enough to take the tips of 2 or 3 side branches from each pine tree. Clean the cut young shoots from debris and remove any needles that got mixed in. Transfer the shoots to an enameled or stainless steel pot and pour in water. Put the pot for making pine honey on the stove, bring it to a boil, and simmer over low heat for about 20 minutes. Then remove it from the stove and cover it with a lid. Leave the decoction to infuse for 24 hours.
Step 3
The decoction has a pleasant pine resin aroma and a slightly bitter taste. After 24 hours, strain it through a fine sieve or cheesecloth, add the sugar, and place it on the heat. Once it comes to a boil, reduce the heat to the lowest setting and cook for about 30 to 40 minutes, until the pine honey starts to thicken. Add lemon juice or citric acid so that the syrup does not crystallize later, and cook for another 3 to 4 minutes.
Step 4
You will get a not very thick syrup of a pleasant yellow color that resembles real honey. It has a very pleasant pine aroma. Pour the pine honey into a clean jar and seal it with a lid. Pine honey is primarily considered a remedy. It should be used in moderation - 1 tablespoon for an adult, 1 dessert spoon, or 2 teaspoons, for a child.
