Pickled Tomatoes with Onion and Bell Pepper for Winter

Step 1
First, prepare all the ingredients and spices needed for making the tomato preserves for winter.
Step 2
Take the required number of pre-sterilized jars. Place in each jar a few allspice peppercorns, a bay leaf, a dill umbel, garlic cloves, sliced onion rings, and hot chili pepper to taste.
Step 3
Tightly pack the jars with tomatoes, piercing each at the stem end with a toothpick. Add one sliced bell pepper (cut into rings) per jar, and finish with another layer of onion rings.
Step 4
Fill a large pot with enough water and bring it to a boil. Pour the boiling water to the top of each jar filled with tomatoes.

Cover the jars with sterilized lids and let them stand for 10-15 minutes.

After that, pour the water from the jars back into the pot, cover, and bring it to a boil again.
Step 7
Into each jar, add 1 tablespoon of coarse salt (without a heap) and 3 tablespoons of sugar (without a heap).
Step 8
Add 1 teaspoon of 70% vinegar essence to each jar - you can substitute this with citric acid if preferred.
Step 9
Pour the freshly boiled water back into the jars, filling them to the top.

Seal the jars tightly with sterilized lids, then turn them upside down to check for leaks. Cover with a warm blanket and let them cool completely over several hours.
