Pear Jam with Lemon
Bright and unusual in flavor, love from the very first spoonful. Pear jam with lemon is very easy to make, and the result exceeds expectations. It is not overly sweet and has a light citrus freshness. This jam is a wonderful addition to tea time. It can also be used as a filling for pies.

Preparation
Step 1
Prepare all the necessary ingredients. Which pears are best for jam? Choose ripe but firm pears so that during cooking they do not fall apart and remain in pieces. Use whole fruit without damage. Rinse the pears and lemon well under running water. If the pears are naturally sweet, you may need less sugar.
Step 2
Cut the pears into 4 parts and remove the cores. If the pear skin is thin and soft, you do not have to peel it. Cut the pears into small cubes or slices.
Step 3
Place the chopped pears into a pot and sprinkle them with sugar. Leave them to stand for a few hours so the pears release their juice. A glass or enameled dish is suitable for this. It is better not to use metal or aluminum cookware so oxidation does not occur. Do not add all the sugar at once. Taste the jam during the first cooking. If needed, you can add more sugar later.
Step 4
Trim the ends off the lemon on both sides, cut it in half, and slice it into thin pieces. Remove all the seeds you find. There is no need to peel it.
Step 5
When the pears release their juice, place them over heat and bring them to a boil. Add the lemon slices to the pears, stir, and simmer for 1–2 minutes. Then turn off the heat and leave the jam to stand and cool.
Step 6
This is necessary so the syrup can infuse and the fruit itself does not boil apart. Sterilize the jars in any way that is convenient for you. Simply pour boiling water over the lids. Then bring the jam to a boil again and simmer it for 4–5 minutes.
Step 7
Pour the boiling jam into the prepared jars and close them with lids. Turn the jars upside down, wrap them in a blanket, and let them cool in that way. Why wrap them in a blanket? This allows the jam to cool much more slowly and continue finishing as it cools.

Store the finished jam in a cool place. Enjoy!
