Peanut butter fudge
Homemade peanut butter fudge made with brown sugar and vanilla, cooked briefly then chilled until firm and cut into rich, sweet squares.

Preparation
Step 1
Melt the butter in a saucepan over a medium heat. Add the brown sugar and milk, then bring the mixture to the boil and cook for 2-3 minutes, without stirring.
Step 2
Remove the pan from the heat and stir in the peanut butter and vanilla seeds until fully combined.
Step 3
Put the icing sugar into a large bowl and carefully pour the hot butter and sugar mixture over it. Using a wooden spoon, beat everything together until smooth.
Step 4
Pour the mixture into a 20cm (8in) square baking tray. Leave it to cool slightly, then transfer to the fridge and chill until completely set.
Step 5
Once firm, cut the fudge into squares with a sharp knife, turn out of the tin, and store in an airtight container.
