Peach Compote for Winter

Preparation
Step 1
Prepare all the necessary ingredients. Which peaches are best for compote? Choose firm, springy fruit with a bright aroma. Soft, overripe peaches may fall apart.
Step 2
Wash the peaches well, dry them, and remove the pits by cutting each fruit in half. This can be a bit time-consuming - the pits hold quite tightly, but you can usually pry them out easily with the tip of a sharp knife.
Step 3
Wash the jars and lids with baking soda and sterilize them. Fill the jars with peach halves. Add 1 whole clove to each jar.
Step 4
Pour boiling water over the peaches in the jars, filling right up to the rim, and cover with sterile lids. Let stand for 5 minutes. If you like softer fruit in compote, repeat this process 1-2 more times. I prefer soft peaches, so I did a triple pour.
Step 5
To do this, pour the water from the jars into a pot and add the sugar. Put on the heat and bring to a boil, stirring. Add a pinch of citric acid and cinnamon.
Step 6
Pour the boiling syrup over the peaches again, filling to the rim. Immediately seal tightly with screw-top lids, turn the jars upside down, and wrap them in a towel/blanket until completely cool. After cooling, you can store the jars at room temperature; if possible, you can move them to a pantry, cellar, or basement.
Step 7
Store the compote in a dark, cool place (pantry, cellar). Shelf life is up to 12 months. After opening, drink within 3 days, keeping it refrigerated. Enjoy!
