Pea and mint soup
A smooth and vibrant pea and mint soup blended until silky, finished with crème fraîche. It is a fresh, elegant starter or light meal.

Preparation
Step 1
Bring a large pan of water to the boil and add a generous pinch of salt.
Step 2
Add the mint leaves and return the water to the boil. Tip in the peas and cook for 2-3 minutes, until they are just tender and a vivid green.
Step 3
Drain the peas and mint, reserving the cooking liquid, and transfer them to a food processor. Leave to cool for 3-4 minutes.
Step 4
Pour in just enough of the reserved cooking liquid to cover the peas and mint, then blend for 1-2 minutes until smooth and brightly coloured.
Step 5
Season to taste with salt and freshly ground black pepper, then add a generous drizzle of olive oil.
Step 6
Add 140ml (4½fl oz) of the crème fraîche to the purée and pulse briefly until fully combined.
Step 7
To serve, divide the soup evenly between four warmed bowls. Place a neat tablespoon of crème fraîche in the centre of each bowl.
