Pea and ham soup
A comforting pea, potato and mint soup blended until smooth, finished with pieces of ham and fresh mint for a classic, hearty bowl.

Preparation
Step 1
Heat the oil in a large lidded saucepan over a low to medium heat. Add the chopped onion and cook gently, keeping the heat low so they soften without browning.
Step 2
Stir in the roughly chopped potato, then pour in the stock. Cover loosely and bring to the boil, then lower the heat slightly and simmer for about 10 minutes, or until the potato is tender.
Step 3
Add the peas along with 3-4 mint stalks and their leaves. Bring the soup back to the boil, then remove from the heat. Blend until smooth using a food processor or hand blender. Taste and season with salt and pepper if needed, bearing in mind the stock may already be quite salty.
Step 4
Stir in the ham and let it warm through in the hot soup. Serve immediately, garnished with a few fresh mint leaves.
