Pastry Made from Easter Bread
Quick, super simple, and unbelievably delicious. Everyone remembers the wonderful grandmas’-style “Potato” pastry from childhood, tender, soft, and simply very tasty. Today I am sharing a not quite traditional version, but a very delicious one.

Step 1
Ingredients you will need: any Easter bread or festive sweet bread, whole or in pieces, fresh or stale, it does not matter. Softened butter. Cornstarch. Salt and vanilla. Sugar. Alcohol, if desired. Eggs. Milk.
Step 2
Cut the Easter bread into pieces 1-1.5 cm thick, about 1/2 inch. Place them in the oven to dry out. Adjust the temperature and time yourself, you need dry crumbs or rusks.
Step 3
For the cream, combine the eggs, sugar, salt, vanilla, and cornstarch, and mix well. Then add room-temperature milk. Everyone makes custard a little differently. Some pour in hot or boiling milk. That is not essential. Do it the way you are used to. If the mixture happens to become lumpy, blend it with an immersion blender.
Step 4
Let it cool slightly, then add the alcohol and butter. Mix well. You should get a tasty, smooth cream. When it cools, it will become thicker. Cover it so the wrap touches the surface and refrigerate until completely cooled.
Step 5
By this time, the dried bread pieces are ready. I dried mine at 120°C (250°F) for about 1 hour. Let them cool completely.

Grind them into crumbs.

Combine them with the cooled cream. Mix well.
Step 8
You should get: soft, moderately moist, stable, and not dry mixture.

Shape the pastries, about 55 g each, roughly 2 oz.

I got 13 pieces.

For the coating, I use 1 tbsp cocoa and 1 tbsp powdered sugar. Mix them together; if needed, you can sift the mixture.

Coat each piece well.

For appearance and flavor, decorate with walnuts.

Tender, soft, very aromatic, and delicious. If you do not know what they are made from, no one will guess that it is Easter bread. Moderately sweet, with a light hint of alcohol.
