Preparation
Step 1
If you have frozen fish, take it out of the freezer in advance and leave it at room temperature until completely thawed. Which pasta is best to use? You can take any kind you like; for this recipe it is preferable to use tagliatelle (long, thin, wide pasta).
Step 2
Boil the pasta in lightly salted water according to the instructions on the package. The pasta should be cooked al dente. Drain the cooked tagliatelle in a colander to remove all excess liquid.
Step 3
In the meantime, remove the skin from the red fish and take out any bones, if present. Cut the fillet into medium-sized cubes.
Step 4
In a skillet with a thick bottom, heat some vegetable oil. Add the pieces of red fish and fry them over medium heat. Do not cook the fish too long, 2-3 minutes is enough, otherwise it will become dry. Stir the pieces from time to time so they do not burn. Sprinkle the fish with freshly squeezed lemon juice.
Step 5
Prepare the cream sauce. In a dry skillet lightly toast the flour, stirring constantly. Reduce the heat to just below medium so the flour does not burn. Add the butter.
Step 6
Stir as the butter melts and mix everything until the mixture is smooth.
Step 7
Pour in the cream and add nutmeg and salt. The cream should have a fat content of at least 20%. Mix everything thoroughly and leave it to thicken. If the sauce turns out too thick, pour in a little more cream.
Step 8
Add the pasta and the pieces of red fish to the skillet with the cream sauce. Gently mix everything together.
Step 9
Sprinkle the finished dish with finely chopped fresh herbs. According to your taste, this can be dill, parsley, basil or spring onion. Season with pepper to taste and serve before it cools down!
