Pasta with Minced Meat and Tomato Paste

You can make it with meat or with mushrooms instead, turning it into a fully meat-free, vegan-friendly option. By the way, it works great for a romantic dinner too!

Preparation
Step 1
How to make pasta with minced meat and tomato paste? First, prepare all the necessary ingredients. In this recipe I use spaghetti, but you can replace them with any other long pasta, such as tagliatelle, fettuccine, bucatini or linguine. For the mince you can use beef, as I did, or a mixed mince.
Step 2
Grate the cheese on a fine or medium grater. You can use any cheese: if you want the dish closer to Italian cuisine, choose Parmesan. A simple semi-hard fermented cheese will also work well.
Step 3
Peel the garlic and finely chop it with a knife.
Step 4
Bring a large amount of salted water to a boil on the stove, using about 1 liter of water and 1 tablespoon of salt (without a heap) per 100 g of pasta. I still recommend adding a bit less salt, since the mince will also be salted. Add the spaghetti and cook until al dente, about 7-8 minutes.
Step 5
While the pasta is cooking, prepare the tomato–meat sauce. In a skillet over medium heat, melt the butter. Add the mince and fry for about 5 minutes, breaking up any lumps, until all the mince has changed color.
Step 6
Depending on the quality of the mince and the amount of fat in it, more or less liquid will be released. You can wait until most of the liquid evaporates, but I suggest not boiling it off too much - the sauce will be juicier this way. Add the chopped garlic to the pan and fry everything together, stirring, for 2 minutes.
Step 7
Add the tomato paste and stir. Simmer everything together for 2-3 minutes.
Step 8
Add the tomatoes in their own juice to the mince. Season with salt and pepper and mix well. Heat everything together for another 2-3 minutes. If you don’t have canned tomatoes in their own juice, you can make something similar yourself: take 2 medium tomatoes and peel them. Grate one tomato on a fine grater to make a purée, and cut the second tomato into small pieces. Mix them together. If you like, you can add a little ketchup to the tomato mixture.
Step 9
While the mince is finishing cooking, drain the cooked spaghetti in a colander and let the water run off.
Step 10
After that you can simply transfer the pasta to the skillet with the mince and mix everything together. But I suggest a more elegant serving: divide the pasta between plates, spoon the tomato-meat mixture on top, sprinkle with cheese and garnish with a sprig of basil. Enjoy!
