Preparation
Step 1
How to make pasta with capers? Prepare all the ingredients. Instead of tagliatelle, you can use any other pasta: shells, farfalle, fusilli, penne, rigatoni, linguine, fettuccine, etc. It’s best to use durum wheat pasta for this dish. For the ground meat, pork or beef works best. You can also choose herbs to your taste: parsley, dill, basil.
Step 2
Pour vegetable oil into a skillet and heat it. Then sauté the diced onion in the hot oil until soft, about 5-7 minutes. Add the finely chopped garlic and keep frying until you smell the garlic aroma.
Step 3
Add the ground meat to the onion-garlic mixture. Stir and cook until the meat juices have completely evaporated. Then continue frying for 5 more minutes so the meat lightly browns. While cooking, keep stirring and breaking up the meat with a wooden spatula so no lumps form.
Step 4
Add the tomato paste. If the paste is very thick, add a little water. Season the meat mixture with salt and pepper to taste, mix well, and cook for 2-3 minutes more.
Step 5
Pour water into a pot and set it over heat. Note that pasta should be cooked in plenty of water, so use a large pot. When the water boils, lightly salt it, add the pasta, and cook uncovered until al dente.
Step 6
Drain the hot pasta in a colander and let the excess liquid drip off. Then transfer the tagliatelle to the skillet with the tomato meat sauce. Mix thoroughly so the sauce is evenly distributed. Taste and add salt if needed, then mix again.
Step 7
Serve the hot pasta on plates, top with capers, sprinkle with freshly ground black pepper (or your favorite spices), garnish with herbs, and serve immediately while it’s still hot.
