Pasta Carbonara with Mushrooms, Bacon, and Cream

Preparation
Step 1
You can replace spaghetti with fettuccine or any other long pasta. Use cream with at least 20% fat. Parmesan can be substituted with another dry or semi-hard cheese. If authenticity isn’t crucial, use any flavorful cheese you like.
Step 2
Wash the mushrooms and slice them thinly. You can use fresh or frozen mushrooms - if frozen, take one-third to half more since they release more liquid when cooked.
Step 3
Slice the bacon into thin strips. Smoked, boiled-smoked, or raw bacon all work well.
Step 4
Finely chop the garlic. You can substitute it with ½ teaspoon of dried garlic.

Finely chop the parsley.
Step 6
In a bowl, combine egg yolks, cream, grated Parmesan, salt, and pepper. Mix the sauce until smooth. If you want more sauce, add extra cream.
Step 7
In a dry skillet or saucepan with a thick bottom, place the mushrooms and cook over medium heat until all excess moisture evaporates. Add a drop of vegetable oil if needed.
Step 8
Add the bacon and fry together over high heat for 3-5 minutes.

Add the garlic and fry for another 1-2 minutes.

Add the chopped parsley, season with salt and pepper, and stir well. Remove from heat.
Step 11
Cook the spaghetti in plenty of salted water until al dente (one minute less than the package instructions). Drain all the water, leaving the pasta in the pot.

Return the pot to low heat. Add the sautéed mushrooms, bacon, and herbs. Mix well.
Step 13
Pour in the creamy cheese sauce and stir quickly so the yolk and cheese evenly coat the pasta. Remove from heat immediately.
Step 14
Serve the hot Carbonara on plates. Sprinkle with grated Parmesan and garnish with fresh or lightly heated cherry tomatoes and herbs. Enjoy!
