Pan-Fried Vegetables in Soy Sauce

Step 1
How to pan-fry vegetables in soy sauce: prepare everything from the list. Instead of green beans you can use young pea pods. Celery stalks also work well. If you have it, use leeks instead of regular onion for a softer taste.
Step 2
Wash, pat dry, and peel the carrots, garlic, and onion. Trim the zucchini and eggplant stem ends. If the squash isn’t young, peel it and remove the seeds. Halve the bell pepper and remove the core and seeds. Trim both ends of the green beans and remove the stringy “threads.” Rinse everything well in clean water and pat dry with paper towels.
Step 3
Cut the carrots and onion into large cubes.
Step 4
Cut the eggplant and bell pepper into the same size cubes as the carrots and onion - uniform pieces look more appetizing. Cut the green beans into small segments.
Step 5
Peel the ginger root and grate it finely. Chop the garlic with a knife or press it through a garlic press. Cut the zucchini into small pieces.
Step 6
Heat vegetable oil in a heavy-bottomed skillet. Add the onion and carrots first. Cook, stirring constantly, until the onion turns golden.
Step 7
Add the green beans, eggplant, and bell pepper. Reduce heat to slightly above medium and sauté for about 8-10 minutes, stirring occasionally. When the eggplant and beans are almost done, add the zucchini. Stir and cook another 4-5 minutes. The vegetables should stay slightly al dente, not turn to mush.
Step 8
Add the garlic and ginger, then pour in sesame oil and soy sauce. Stir and keep on the heat for a few seconds.
Step 9
Sprinkle the finished dish with sesame seeds.

Garnish with a sprig of fresh herbs and serve!
