Preparation
Step 1
Prepare the ingredients. Fresh trout works especially well, but frozen fish can also be used if thawed completely beforehand. Choose spices to taste; rosemary or dried mint can also be added.
Step 2
A trout steak about ¾–1 inch thick works well for pan-frying. Remove any scales and pat the fish dry with paper towels. Season with salt and ground black pepper and leave for a few minutes.
Step 3
Pour the vegetable oil into a frying pan and heat it. Add a few sprigs of thyme and leave them in the hot oil for a couple of minutes to release their aroma.
Step 4
Place the trout steak over the herbs and cook over medium heat for 3–4 minutes.
Step 5
Turn the fish over and cook for another 3 minutes.
Step 6
Cover the pan, reduce the heat and cook for another 3–4 minutes, until the trout is cooked through. Remove from the heat and serve hot or chilled, drizzled with lemon juice. Rice or vegetables make a good side dish.
