Pan-Fried Potato Zrazy with Mushrooms
A hearty, easy family dinner in just 30 minutes! Pan-fried potato zrazy with mushrooms are a great family dish and also suit a festive table. They are completely self-sufficient on their own - you can serve them with any sauce. They are also great with salads, pickles and marinated vegetables.

Preparation
Step 1
Peel the potatoes and rinse off any dirt. You can use any mushrooms. I have forest mushrooms that were boiled in water for 25–30 minutes. Instead of them you can use champignons; just rinse them well.
Step 2
Put the peeled potatoes into a pot, cover with water and bring to a boil. Add a little salt. Cook until done, about 15-20 minutes. The potatoes should be soft.
Step 3
Drain the hot water from the cooked potatoes and mash them with a potato masher. Then let the potatoes cool.
Step 4
Peel the onion and rinse it in cold water. Finely chop the mushrooms and the onion. Pour a little vegetable oil into a hot skillet and fry the mushrooms with the onion for 5-7 minutes. Add a little salt. Let the mushroom filling cool.
Step 5
Add the egg and flour to the cooled mashed potatoes and mix.
Step 6
With wet hands form a small potato patty and make a hollow in the center. Put a little mushroom filling in the middle. Add some more potato on top and seal the edges.
Step 7
Shape the potato zrazy nicely and coat them in breadcrumbs.
Step 8
Fry the zrazy in a hot skillet with a little vegetable oil. Cook them over low heat for 2-3 minutes on each side.
Step 9
While they are frying, you can prepare a sauce: mix sour cream, dill and a little garlic.
Step 10
The finished potato zrazy will turn an appetizing golden color and develop a crispy crust. Serve them hot with the garlic sauce. Enjoy!
