Step 1
How to make pan-fried pork with gravy? Prepare all the ingredients. Use boneless pork - tenderloin or ham/leg with a little fat, or pre-cut meat. For extra kick, add 1/2 tsp adjika to the tomato paste. Besides salt and pepper, you can use pork seasoning blends - check the label so you don’t oversalt.
Step 2
Rinse the pork, pat it dry, and cut into medium pieces - cubes or strips.
Step 3
Chop the onion as you like - small dice or larger pieces. I cut it large.
Step 4
Heat vegetable oil in a deep skillet over high heat. Add the pork and fry, stirring, until golden.
Step 5
When the pork starts to brown, add the onion. Fry, stirring, for a few more minutes, until most of the meat is coated with a golden crust.
Step 6
Reduce the heat to medium and add the tomato paste. Simmer together, stirring, for 3-5 minutes.
Step 7
Pour in hot meat broth.

Add bay leaves and mix well. Bring to a boil, then simmer gently for about 20 minutes. You can cover the skillet so the broth doesn’t evaporate too fast or splatter. If you want more gravy, add another cup (240 ml) of broth.

At the end, add sour cream, salt, and ground pepper. Stir and simmer for 2 more minutes, then remove from heat.
Step 10
Serve the pork on plates, sprinkle with chopped herbs, and serve with any side dish. Enjoy!
