Pan-Fried Pasta with Sausage

Preparation
Step 1
Prepare all the required ingredients. You can use pasta of any shape, although pasta made from durum wheat works particularly well because it retains its shape and is less likely to become overcooked. You can also use any type of sausage, keeping in mind that its flavor will affect the taste of the finished dish.
Step 2
Pour clean water into a saucepan, place it over the heat and bring it to a boil. Add 1 tablespoon of vegetable oil and season the water with salt. Add the pasta and cook until al dente, as it will continue cooking in the frying pan. Follow the cooking time indicated on the package. Drain the pasta in a colander.
Step 3
Remove the casing from the sausage and cut it into evenly sized cubes. Match their size to the pasta: use smaller cubes for small pasta shapes and larger cubes for bigger ones.
Step 4
Peel the onion and cut it into small cubes.
Step 5
Rinse and dry the herbs, then chop them finely. Parsley works well, but you can use any fresh herbs you like.
Step 6
Heat a little vegetable oil in a frying pan and add the diced sausage. Fry until lightly browned. Add the chopped onion, stir and continue cooking for a few more minutes.
Step 7
Once the onion is golden, add the cooked pasta to the frying pan. Add your preferred seasonings and a little salt, if necessary. Dried basil and ground black pepper work especially well. Mix thoroughly and fry for another 2–3 minutes. Turn off the heat and remove the pan from the stove.
Step 8
Transfer the pasta and sausage to a serving dish or divide it among plates. Garnish with fresh herbs or finely grated cheese, if desired. You can also serve it with a creamy or cheese sauce.
