Oven-Roasted Meat in a Salt Crust
Wonderfully flavorful and incredibly easy to prepare! The salt crust helps the meat remain juicy and aromatic without making it excessively salty. Serve it hot with a side dish or chilled in sandwiches.

Preparation
Step 1
Prepare the ingredients. Choose a single boneless piece of meat weighing approximately 2.2 lb; a very small piece may dry out, while a much larger one will take longer to cook. Pork or beef will work. Use ordinary coarse salt and select the spices according to your taste.
Step 2
Pour all the salt into a bowl and add any seasonings suitable for meat. Paprika and ground black pepper work well, as do rosemary, thyme, oregano, dried garlic or a prepared meat seasoning blend. Mix the salt and spices, then add the egg, which will help bind the salt crust while it bakes.
Step 3
Mix the salt thoroughly with the egg. The mixture should resemble moist crumbs.
Step 4
Choose a suitably sized baking dish; the original recipe used an 8 × 8-inch glass dish. Spread one-third of the salt mixture evenly over the bottom.
Step 5
Rinse the meat, pat it thoroughly dry and place it on top of the salt layer.
Step 6
Cover the meat completely with the remaining salt mixture and shape it firmly around the piece with your hands. Because the salt contains egg, it should hold together without falling away. Bake in an oven preheated to 400°F for approximately 1 hour, adjusting the time according to the size and type of meat and your oven.
Step 7
Remove the cooked meat from the oven and leave it to cool slightly. Break open the hardened salt crust and carefully remove the meat.
Step 8
Serve the salt-crusted meat hot with your preferred side dish or chill it and use it for sandwiches.
