Oven-Baked Sweet Potato with Cheese

Preparation
Step 1
Prepare the necessary ingredients. In this recipe I used store-bought finely grated Parmesan and frozen herbes de Provence. You can use another hard cheese and grate it yourself. Wash the sweet potato very thoroughly with a brush or sponge to remove all the dirt, because it will be baked with the skin on.
Step 2
Dry the sweet potato with paper towels and cut it into long but not very thick sticks. The tuber itself is very dense, so it is better to use a thin, sharp knife, be careful not to cut yourself. Visually, the wedges should resemble French fries. Preheat the oven to 200°C (390°F).
Step 3
In a deep plate, mix the soy sauce and vegetable oil. Add the nutmeg, Italian herbs, and garlic passed through a press or finely chopped. I also add a pinch of salt because sweet potato is quite sweet. Adjust to your taste. Mix everything well. When adding soy sauce to a dish, keep in mind that it is already quite salty. Adjust the total amount of salt, otherwise you may oversalt the dish.
Step 4
Add the sauce to the sliced sweet potato. Using a spoon or your hands, mix everything so that the soy sauce is distributed evenly over all the wedges. If you mix with your hands, I recommend using disposable rubber gloves, because if you have any small cuts on your hands, they may sting when the salty sauce gets into them.
Step 5
Line a baking dish or tray with parchment paper. Arrange the sweet potato slices a short distance apart from each other. Cover the tray with foil and place the sweet potato in an oven preheated to 200°C (390°F) for about 30 minutes, using the top-and-bottom heat setting.
Step 6
At the end of cooking, remove the foil, sprinkle the sweet potato with grated cheese, and return it to the oven for about 5 minutes. If possible, switch the oven to convection so that the cheese and the sweet potato brown nicely.
Step 7
Sprinkle the finished dish with a little more cheese and herbs, add a sauce of your choice and fresh vegetables. Serve as a side dish or appetizer. Enjoy your meal!
