Step 1
How do you bake sea perch fillet in the oven? Prepare all the necessary ingredients. Scrub the potatoes and carrots under running water. Peel the onion and garlic and rinse them. Rinse the sea perch fillet in cold water and pat it dry with paper towels. Rinse the herbs and shake off the excess moisture. Preheat the oven to 180°C (350°F).

Grease a baking dish with vegetable oil. Cut the potatoes into thin slices and lightly salt them. The slices should be no thicker than 3 mm, about 1/8 inch, so the potatoes cook through but stay intact. If you like, sprinkle them with your favorite spices. Thyme, sweet paprika, rosemary, marjoram, and basil all work very well here.
Step 3
Cut the onion into thin half-rings and arrange it in an even layer over the potatoes. Grate the carrot on a fine grater so it has time to cook through instead of staying raw. Spread the carrot on top and add a little salt.

Season the sea perch fillet with salt and pepper on both sides and place it on top of the vegetables. If the fillets overlap slightly, that is fine, or you can cut them into portion-sized pieces.

Finely chop the herbs and mince the garlic. It is best to chop the garlic very finely with a knife, because this gives it a sharper flavor without bitterness.
Step 6
Pour water into a bowl, add the tomato sauce, herbs, and garlic, and mix everything well. The sauce turns out very aromatic. The tomato sauce can be any kind, or you can replace it with tomato paste or tomatoes in their own juice, blended beforehand. If your oven browns very strongly, there is a risk that the herbs may burn. In that case, it is better to add them 5 minutes before the dish is done.

Pour the prepared sauce over the fish and vegetables so the perch does not dry out while baking. Place the dish in the hot oven and bake at 180°C (350°F) for about 30 minutes, until the fish and vegetables are done. To check whether the dish is ready, pierce the potatoes and the fish in the thickest part with the tip of a knife. If it goes in easily, the dish is ready. Divide into portions and serve.
