Step 1
How do you bake potatoes with mayonnaise in the oven? Prepare all the necessary ingredients. Of course, it is best to use new potatoes, but if you do not have them, older potatoes will also work. Homemade mayonnaise is preferable.
Step 2
Peel the potatoes. Try to remove only a thin layer of skin. This is not very easy to do with a knife, so I recommend using a vegetable peeler, as it peels potatoes very well.
Step 3
Cut the peeled potatoes in any convenient way. I cut them into half-moons, but you can also cut them into rounds or cubes. The main thing is not to cut them too small, otherwise the potatoes will turn into mash during baking, while they should still hold their shape.

Salt the sliced potatoes.

Add the minced garlic. I grate it on a fine grater, but you can also chop the garlic with a knife or press it through a garlic press. If, for some reason, you do not have fresh garlic, feel free to replace it with garlic powder.

Add the mayonnaise. If desired, you can of course use sour cream, thick yogurt, or heavy cream instead of mayonnaise.
Step 7
Mix everything well. At this stage, you can also add your favorite herbs and seasonings to the potatoes. Provençal herbs, thyme, rosemary, ground allspice, or paprika would all work well here. Or perhaps you might add grated cheese. Choose according to your taste.
Step 8
Place the potatoes in an ovenproof dish. Bake the potatoes in an oven preheated to 180°C / 356°F for about 35–40 minutes. The exact time depends on your oven and the type of potatoes. You can cover the dish with foil; then the potatoes will turn out more stewed. Or you can uncover them 10 minutes before the end of baking to get a light golden crispness. If you prefer a crispier version of the dish, do not cover the dish with foil at all.

These potatoes are tasty both hot and cold. You can serve them as a standalone dish, as they are filling and complete on their own. Or serve them as a side dish with meat or fish dishes. Enjoy!
