Oven-Baked Pork Kofta Kebabs

Preparation
Step 1
How do you make oven-baked pork kofta kebabs from minced pork? Very easily! Prepare all the necessary ingredients. Grind the pork and pork fat through a meat grinder and mix. I used store-bought ground pork for this recipe.
Step 2
Peel the onion and also run it through a meat grinder or grate it on a coarse grater. Alternatively, finely chop the onion by hand. Add the onion, paprika, and ground black pepper to the meat. Salt to taste. Knead everything thoroughly. For the kebabs to hold better on metal skewers or wooden sticks, the meat mixture needs to be “beaten” well. It’s best to do this in portions.
Step 3
Rinse the parsley, pat it dry with paper towels, and finely chop it. Add it to the meat and mix again. To make the oven-baked kebabs as close as possible to the ones cooked over coals, add 1/4-1/2 teaspoon liquid smoke to the mixture. It will give the finished dish a campfire-like aroma.
Step 4
Cover the bowl with plastic wrap and refrigerate for about 2 hours. About 30 minutes before cooking, preheat the oven to 180-200°C (356-392°F).
Step 5
Shape the kofta kebabs around small skewers or wooden sticks. To make it easier to form elongated sausages, wet your hands with cold water.
Step 6
Place the kebabs on a rack and put them in the oven. Set a baking sheet or drip tray underneath so the fat and juices can drip down during cooking. Bake at 180-200°C (356-392°F) for about 30-40 minutes. After 15-20 minutes, turn the skewers over so an even, appetizing crust forms on all sides. Note that baking temperature and time may differ from what’s listed in the recipe.
