Preparation
Step 1
Prepare the listed ingredients. It is best to use boneless pork without sinew, in one whole piece. Thaw it in advance. Use a medium onion, though that also depends on preference. If you like onion, you can add more. I use a semi-hard cheese with 50% fat content. It melts beautifully in the oven and forms an appetizing crust.
Step 2
Remove the cheese from its packaging and cut off the rind if needed. Grate the cheese on a coarse grater. Preheat the oven to 180°C (350°F).
Step 3
Peel the onion and slice it into half-rings or rings. To prevent your eyes from getting irritated while slicing, wet the onion and the knife with ice-cold water.
Step 4
Rinse the meat and pat it dry with paper towels. Cut the pork into portion-sized pieces 1.5 to 2 cm, about 5/8 to 3/4 inch, thick. Pound the meat on both sides with a meat mallet or a tenderizer, being careful not to damage the integrity of the pieces. If you do not have a meat mallet, pound the meat with the back of a knife. Place the prepared chops into a baking dish greased with vegetable oil or lined with baking paper.
Step 5
Season each piece with salt and pepper to taste. Spread mayonnaise evenly over the top. The mayonnaise will make the meat juicier, and the onion and cheese will not dry out.
Step 6
Place the sliced onion over each chop. Sprinkle each piece evenly with grated cheese. Put the baking dish with the pork chops into the oven preheated to 180°C (350°F). How long should you bake the chops? About 20 to 25 minutes, or until golden brown. Baking time may vary, so judge by how done the dish looks.
