Preparation
Step 1
Start by preparing the fish for baking. Clean and rinse the pollock well, trim off the fins, and remove the insides. Pat the fish dry with paper towels.
Step 2
Cut the fish into pieces 1–2 cm / about 1/2–3/4 inch thick. You can also cut it into larger pieces, if you prefer. Season with salt and pepper to taste. Leave the fish for 10–15 minutes so it absorbs the salt and pepper.
Step 3
If you like fish with spices, you can add any fish seasoning. I like fish with just pepper, so I do not add anything else.
Step 4
Grease a baking dish with vegetable oil. I used sunflower oil, but any other oil will work. First, arrange the fish in the baking dish. Sprinkle with finely chopped dill. The main thing with dill is not to overdo it; you only need a little.
Step 5
Then prepare the sauce. Mix the cream with 1 tablespoon of wheat flour and add a little salt. The cream makes the pollock juicier. Pour the prepared sauce over the fish in the dish.
Step 6
Grate the cheese on a coarse grater. Sprinkle it over the pieces of pollock.
Step 7
Place the dish in an oven preheated to 200°C / 392°F. It is best to use both top and bottom heat. In my electric oven, if only bottom heat is used, the melted cheese takes a very long time to brown. Bake for 30–35 minutes, checking during the process, as all ovens are different.
Step 8
Pollock can be served with mashed potatoes, rice, vegetables, or simply with bread. If preparing it for a festive table, I recommend using pollock fillets for convenience.
