Step 1
How do you make oven-baked pangasius fillet? Prepare all the necessary ingredients. First of all, choose good-quality fish. Chilled fish is, of course, preferable, as frozen fish contains fewer nutrients. If you only have frozen fish, thaw it properly: after taking it out of the freezer, place it in the refrigerator first, and only after 5–7 hours finish thawing it at room temperature.
Step 2
In stores, pangasius is usually sold as boneless fillets, which saves you from having to remove any bones. Wash the fish well and cut it into medium-sized pieces.
Step 3
Prepare an ovenproof baking dish for the fish. Choose a dish with fairly high sides, because even if the fish has been thawed, it may still release quite a lot of liquid during cooking. Place the cut fish in the dish.
Step 4
Season with salt. You do not have to limit yourself to salt only; you can add your favorite spices and seasonings. Thyme, tarragon, Provençal herbs, and fresh herbs such as cilantro, parsley, and others pair beautifully with fish.
Step 5
Add dried dill to the sour cream. You can also add dry seasonings to the sour cream sauce: dried garlic or green onion will work very well. If, for some reason, you do not have sour cream, you can replace it with mayonnaise, though this is not the best option, or with medium-fat cream. Cream with 23% fat works perfectly.
Step 6
Pour the sour cream or cream over the fish. Bake in an oven preheated to 180°C / 356°F for about 35 minutes. For the first 20 minutes of cooking, it is best to cover the top of the dish with foil, so the fish does not burn and stews well. For a lighter version, you can leave the foil on until the end, and the dish will turn out more stewed than baked.
Step 7
The pangasius turns out very tender and juicy. This fish goes well with almost any side dish, such as rice or potatoes. Serve the baked fish with seasonal vegetables and herbs, as well as fresh vegetable salads. Enjoy!
