Oven-Baked Offal-Filled Pastries (Yeast Puff Pastry)

Step 1
How to make offal-filled pastries in the oven? Prepare the ingredients. If needed, thaw the offal in advance on the lower shelf of the fridge. Rinse the chicken liver and remove blood clots and any pale cords (bile ducts) or gallbladders, if present.

Rinse the thawed chicken hearts. Trim excess outer fat and remove large arteries. Cut the hearts in half and remove any blood clots inside.
Step 3
Put the chicken liver into a pot with cold water. Skim off foam during cooking. Liver cooks quickly - after the water boils, it will be done in about 10-15 minutes.

Put the chicken hearts into a clean pot with cold water. After boiling, they’ll be done in about 15-20 minutes.
Step 5
Peel the onion, rinse it, pat dry, chop, and sauté in a skillet with sunflower oil until golden.
Step 6
While the onion fries, make the filling: run the chicken hearts and liver through a meat grinder (or use a blender).
Step 7
Add the fried onion to the bowl with the filling. Separate the egg white from the yolk. Cover the yolk and set it aside. Add the raw egg white to the filling. Salt to taste and mix thoroughly.
Step 8
Roll out the ready-made yeast puff pastry thinly. Cut it into squares about 2 inches (5 cm) on each side. Place a heaped teaspoon of filling in the center.
Step 9
Pinch the edges into a triangle. Press the seam lightly with a fork so it seals better and looks neat. Add 1/2 tsp (about 2.5 ml) boiled water to the reserved yolk and mix until smooth.
Step 10
Brush the triangles with egg yolk and bake the pasties in the oven until golden.
