Preparation
Step 1
How do you bake lamb loin (rack) in the oven? Prepare the necessary ingredients. You can cook the lamb loin whole in one piece or cut it into portions. For seasoning, I use a ready-made lamb spice blend.
Step 2
Rinse the cut meat thoroughly under running water, because it can have tiny bone fragments on it. Then pat the meat dry with paper towels to remove excess moisture.
Step 3
Pour olive oil into a large bowl. Add the lamb seasoning, dried rosemary, and salt. Peel the garlic and press it into the bowl. Mix everything well.
Step 4
Coat each piece of lamb thoroughly with the sauce on all sides.
Step 5
Place the lamb on a sheet of foil. Pour over any remaining marinade.
Step 6
Wrap the meat in foil and place it in a metal baking pan. Why metal? The pan itself doesn’t touch the food. If the pan is glass or ceramic, it can crack from heating while empty. Metal won’t have that issue. Put the lamb into a preheated 200°C / 392°F oven for 1 hour.
Step 7
Remove the top layer of foil from the baked meat and leave it in the oven for about 10 more minutes. Don’t go longer, or it will start to dry out - overcooked meat becomes tough.
Step 8
Serve the lamb loin hot. Fresh vegetables make an excellent side. Enjoy your meal!
