Oven-Baked Fish Patties
Appetizing, golden, and perfect for a family dinner! Oven-Baked Fish Patties turn out very tender and soft inside, with a crisp crust on top. They are quick, simple, and convenient to make, because the patties will not fall apart when turning. Besides, baking them in the oven does not require much oil.

Preparation
Step 1
How do you bake fish patties in the oven? Prepare the ingredients. I used ready-made fish fillet, pollock in my case, but it is still better to fillet the fish yourself. Store-bought fillet is very watery and also significantly more expensive than whole fish. Pork fat is needed to soften the minced fish, but if pork fat does not appeal to you, replace it with the same amount of butter.
Step 2
Thaw the fillet beforehand, rinse it, and squeeze out the excess moisture well, especially if it is store-bought like mine. Cut it into medium-sized pieces and pass it through a meat grinder fitted with a fine plate. Place the minced fish in a bowl.
Step 3
Next, pass the pork fat through the meat grinder and add it to the bowl with the minced fish. If you are using butter, simply cut it into small pieces and let it soften slightly.
Step 4
Peel the onion, rinse it, and cut it into pieces. Pass it through the meat grinder after the pork fat. This will both chop the onion and push the remaining pork fat out of the grinder. Add the onion to the bowl with the minced fish and pork fat, and mix everything well.
Step 5
Add 3 tablespoons of breadcrumbs to the mixture. Do not use soaked bread rolls or white bread under any circumstances. Fish mixed with onion is already quite a loose, moist mixture, and after adding soaked bread or a roll, the mixture may become impossible to shape. If you want to use a roll, simply grate it on a coarse grater or grind it in a blender.
Step 6
Add 1 egg, salt, and pepper to the bowl with the mixture, then mix until smooth. Cover the bowl and leave it for 30 minutes so the breadcrumbs absorb the liquid and the mixture becomes firmer.
Step 7
Turn the oven on to preheat to 180°C / 356°F. Pour the remaining breadcrumbs for coating onto a flat plate. Divide the mixture into 5 parts, shape them into small round patties, and coat them in the breadcrumbs.
Step 8
Grease a baking dish with vegetable oil and place the patties in it.
Step 9
Pour a little hot water into the dish, about one third of the way up the patties. Place it in the hot oven and bake the patties for 20–25 minutes, until done. They should brown on top. Remove them from the oven and let them stand for 5–10 minutes.
