Oven-Baked Cod with Vegetables

Step 1
How do you bake cod with vegetables in the oven? Grease the bottom of a baking dish with a drop of sunflower oil and arrange finely chopped zucchini as the first layer. I used frozen, already prepared zucchini. If you are using fresh zucchini, first wash it under running water and peel it if the skin has become tough.
Step 2
Arrange green beans in the dish as the next layer. You can use fresh, canned, or frozen beans, as I did.
Step 3
Peel the onion and cut it into thin half-rings. Sometimes onion skin is difficult to remove. In that case, soaking the onion in warm water for about 5 minutes will make the job much easier. The skin will become softer and easier to peel. Spread the sliced onion over the beans. Salt the vegetables if you need to. I do not salt the vegetables, but I do salt the fish fillet itself.
Step 4
Next, place the cod fillet on top, washed under running water and dried with paper towels. I salted it just a little and added pepper to taste.
Step 5
Drizzle the cod with lime juice. Lime juice can just as easily be replaced with lemon juice. Lime is simply more aromatic. In general, any sea fish pairs very well with tart citrus, revealing its familiar flavor in a new way.
Step 6
Wash the chosen fresh herbs thoroughly under running water and shake off the excess moisture. Absolutely any favorite herbs will suit this dish. I will use dill, parsley, and mint. Mint will give the dish a little sharpness and an amazing aroma.
Step 7
Finely chop the herbs, removing the tough stems first.

Sprinkle the cod with the chopped herbs.
Step 9
More for appearance than for flavor, add a little cheese grated on a fine grater. Bake the cod for 20 minutes in an oven preheated to 180°C (350°F). If your oven browns very strongly, it makes sense not to sprinkle the fish with herbs and cheese right away, but to add them 5 minutes before the dish is done. That way the herbs definitely will not burn. In general, use your oven as the guide here. The fish will cook very quickly.
