Preparation
Step 1
How do you bake cod fillet in foil? First wash the fish well and pat it dry. If needed, thaw it in the microwave, on the lower shelf of the fridge, or at room temperature. Cut the cod fillet into portion pieces. Cut the foil into squares, fold up the edges, and place the fish on them. Rinse the parsley and pat it dry.
Step 2
In a separate bowl, melt the butter. I do this in the microwave, but you can also do it on the stove. Add lemon juice and chopped parsley. Season with salt and pepper to taste. Mix.
Step 3
Evenly spread the prepared butter-and-herb mixture over the cod fillets. Make sure it doesn’t run past the foil edges.
Step 4
Top with onion sliced into rings. Fold the foil edges toward the center, without sealing the fish completely. Bake in a preheated 180°C / 350°F oven for 20-25 minutes, adjusting for your oven.
Step 5
Serve the oven-baked cod right in the foil. Enjoy!
