Oven-Baked Chicken Mince Cutlets with Cheese

Step 1
How to make chicken cutlets with cheese? Prepare all ingredients. Break the bread roll into pieces and pour cold water over it; let stand 5-10 minutes. Use cold water so the crumb stays firm - hot water turns it into a jelly that’s almost impossible to squeeze out.
Step 2
Pat the chicken fillet dry. Cut into pieces and grind in a blender or a meat grinder with a fine plate. I prefer a blender - cutlets come out tender yet nicely firm.
Step 3
Squeeze the soaked bread well, add it to the ground chicken, and blend/grind again until smooth. Transfer the mince to a bowl.
Step 4
Peel the onion, finely chop it, and add to the bowl with the mince.
Step 5
Season with salt and pepper and mix thoroughly. If the mince is very dense, add a little water for juicier cutlets. Mix again and “beat” the mince until it’s tight and smooth: grab a handful, lift it over the bowl, and throw it back in. Do this 10-15 times. Divide the mince into equal portions.
Step 6
Cut a firm, meltable cheese into long sticks. The cheese must melt well, otherwise you won’t get that oozy cheese effect.
Step 7
With wet hands, flatten each portion into a patty, place a cheese stick in the center, bring the edges together, and shape into cutlets.
Step 8
Roll the cutlets in breadcrumbs and coat well.
Step 9
Shape all the cutlets the same way.
Step 10
Line a baking tray with parchment paper and arrange the cutlets on it.
Step 11
Put the tray into a hot oven and bake for 35 minutes at 180°C (356°F). Adjust the exact time to your oven. Remove and serve with any side dish or fresh vegetables.
