Oven-Baked Chicken in a Covered Roaster with Potatoes

Step 1
How do you cook chicken in a covered roaster? Prepare the ingredients. I usually divide the chicken into 3 parts: the back for broth, the breast fillet for cutlets or minced meat, and the drumsticks, thighs, and wings for the oven. These parts are ideal for baking - thanks to the skin they stay juicy inside and brown on the outside.
Step 2
Transfer the chicken pieces to a suitable bowl. Salt and pepper the chicken.
Step 3
Add khmeli-suneli (a Georgian spice blend) or other spices to taste.
Step 4
Press the garlic through a garlic press.
Step 5
Add a little vegetable oil so the spices release their aroma better.
Step 6
Mix everything well and leave it while you prepare the vegetables. During this time the meat will marinate slightly.
Step 7
Prepare the ingredients for the next stage. Wash and peel the potatoes and onion.
Step 8
Cut the potatoes as you like; I cut them into cubes.

Transfer the potatoes to the covered roaster.

Slice the onion into quarter-rings.

Add the onion to the potatoes in the roaster.

Add salt.

For the sauce, mix sour cream (full-fat is best) and ketchup (or tomato paste).

Pour the sauce over the potatoes.

Mix well.

Arrange the chicken pieces on top.

Add a little water, cover with the lid, and bake at 200-220°C (392-428°F) for 30 minutes. Then reduce to 180°C (356°F) and cook for another 40 minutes. Adjust to your oven and check for doneness occasionally.

15 minutes before it’s done, take the roaster out, remove the lid, and finish baking uncovered so the chicken browns.

After those 15 minutes, remove from the oven - the dish is ready!
