Oven-Baked Cheese Vatrushki (Yeast Buns)
Delicious baking from childhood - best served hot! Almost everyone has tried oven-baked cheese vatrushki. But store-bought ones can’t beat homemade: there it’s only cheese, while ours also has curd and herbs. If you haven’t made them yet, you’re missing out. It’s very simple and unbelievably tasty!

Step 1
How do you make oven-baked cheese vatrushki from yeast dough? First, prepare the ingredients for the dough. Use good-quality all-purpose flour. Before buying yeast, read the instructions: this recipe uses yeast that must be dissolved in liquid. Melt the butter and cool it to room temperature.
Step 2
In warm milk (37-40°C / 99-104°F), dissolve the sugar, salt, and yeast. Add a room-temperature egg and mix until smooth.
Step 3
Add the sifted flour. Sifting aerates the flour so the baked goods turn out light and rise well. Adjust the amount of sugar to your taste.
Step 4
Knead a soft, smooth dough. While kneading, add the melted butter. If needed, add a little more flour. The amount of flour may vary, so don’t add it all at once - otherwise the dough can turn stiff. Watch the texture: once the dough stops sticking to your hands, you don’t need more flour.
Step 5
Place the dough in a bowl greased with vegetable oil, cover with plastic wrap, and leave in a warm place for 1.5-2 hours to rise.
Step 6
Punch down the risen dough and divide into 10 equal pieces. Roll each piece into a ball and place on a parchment-lined baking sheet, spaced apart. Let rise for 8-10 minutes.
Step 7
Now prepare the filling. Any curd works; I used brick-style curd - it’s fairly moist and juicy. Preheat the oven to 190°C / 374°F.
Step 8
Grate the cheese on a coarse grater.

Rinse the dill and parsley, pat dry, and finely chop. If you like, replace or add other herbs - green onion, cilantro, or a mixed herb blend.
Step 10
In a bowl, mix the curd, cheese, egg, and herbs. If desired, salt and pepper the filling and mix.
Step 11
Use the bottom of a glass to make an indentation in each dough ball, then spoon the filling into the wells.
Step 12
What should you brush the vatrushki with before baking? Brush the rims with beaten egg yolk. Bake in a preheated 190°C / 374°F oven for about 15 minutes, until golden.
Step 13
Transfer the cheese vatrushki to a serving plate and serve immediately. Enjoy your meal!
