Preparation
Step 1
How do you bake beef with zucchini in the oven? Prepare all the necessary ingredients. You can use any cheese, as long as it is tasty, good-quality, and made without vegetable fats. If your meat is frozen, take it out of the freezer in advance.
Step 2
Wash the beef under running water and dry it with paper towels. Remove any excess sinews and membranes from the meat, if present. Cut the piece of meat into pieces as small as possible. Alternatively, you can make ground beef from it. In this recipe, the meat was finely chopped by hand.
Step 3
Peel the onion, rinse it, and cut into cubes or half rings.
Step 4
Heat the vegetable oil in a pan. Add the chopped onion and fry over medium heat until fragrant and golden.
Step 5
Next, add the chopped beef, or ground beef, to the pan. Mix everything well.
Step 6
Wash the tomatoes under running water and cut them into medium-sized cubes. Peel the garlic and chop it finely with a knife, or press it through a garlic press.
Step 7
Add the tomatoes and finely chopped garlic to the pan with the meat. Salt to taste. At this stage, you can add your favorite seasonings and spices, such as dried basil, oregano, ground sweet paprika, and so on. Mix all the ingredients thoroughly, reduce the heat to medium, cover with a lid, and stew everything together for about 40 minutes. Open the lid from time to time and stir the meat.
Step 8
Wash the zucchini. Cut each one in half.
Step 9
Using a teaspoon, remove the center from each half. The removed flesh can be finely chopped and added to the meat for extra juiciness. In this recipe, the removed zucchini flesh was not used.
Step 10
Fill each zucchini half generously with the beef. Line a baking dish with parchment paper. Place the zucchini on a baking sheet and put it in a preheated oven. Bake at 190–200°C / 374–392°F, using the top and bottom heat setting, for about 30–40 minutes. The time is approximate, so adjust it according to your oven.
Step 11
Sprinkle each zucchini with grated cheese and return to the oven until the cheese browns and forms a golden crust. This will take about 10–15 more minutes.
Step 12
Remove the finished zucchini with beef and tomatoes from the oven, season with allspice to taste, and decorate with fresh herbs. Serve hot.
