Preparation
Step 1
Preheat the oven to 200°C.

Slice onion to thick slices and carefully separate into rings, ensuring some are just one onion-layer thick while others are two layers for variety.

Place half of the flour into a shallow bowl and season with salt and pepper. In a second shallow bowl, whisk the remaining flour with the egg and milk to create a smooth batter. Pour the panko breadcrumbs into a third shallow bowl.
Step 4
Dip the onion rings into the seasoned flour first, coating them thoroughly and tapping off any excess. Next, submerge the floured rings into the batter, flipping to coat completely, and gently shake off any extra batter. Finally, press the rings into the breadcrumbs, ensuring they’re evenly coated all over.
Step 5
Oil the baking sheet. Arrange the onion rings in a single layer. Spray the tops of the coated onion rings with a light mist of oil.
Step 6
Bake in the oven for 18-20 minutes, turning them halfway through at 8-10 minutes, until golden and crisp.
Step 7
Serve immediately for the best texture and flavor.
