Onion Patties with Semolina
A budget option with a golden crust! Onion patties with semolina are for those who don’t just like onions, but really love them - because the flavor is very pronounced. The patties turn out quite interesting.

Preparation
Step 1
How do you make onion patties? For the first time, I recommend not making too many - this is a specific dish. From the listed ingredients I got 8 small patties. Use white or yellow onions. Tomato paste is mainly for color; you can replace it with ketchup.
Step 2
Peel the onions and trim the ends on both sides. When I peel a lot of onions, I usually put on sunglasses :) It looks odd, but the eyes tear up less!
Step 3
Chop the onions as finely as possible. Rinse the knife under cold running water from time to time - this also helps reduce tearing. Even better, chop the onions in a blender so the patties will definitely cook through inside.
Step 4
Transfer the onions to a bowl. Add the egg, tomato paste (or ketchup), and semolina. The mixture will immediately take on a pleasant salmon tint.
Step 5
Add salt and pepper, then add garlic grated on a fine grater. Mix and leave for 20 minutes at room temperature so the semolina can swell a bit. If the onions release too much juice, drain it off.
Step 6
Shape small patties from the onion mixture and fry in sunflower oil on both sides until golden. You can add a little water and stew the patties until done. The onion inside should become soft and should not crunch at all.
Step 7
You can place the cooked patties on paper towels to absorb excess oil, but it’s not necessary.
