Check that the eggs are fresh. Fresh eggs are heavier, while older eggs feel lighter, as if dried out inside. To test them, place an egg in room-temperature water: a fresh egg will sink, while a stale one will float to the surface. Crack the eggs into a bowl. Use a fairly deep bowl so the egg mixture does not spill out.

Beat the eggs lightly with a fork or a whisk, not with a mixer. The eggs should be beaten only slightly.

Salt the egg mixture. At this stage, you can also add seasonings to it. This could be dried garlic, dill, or other herbs. Or perhaps herbs such as thyme, rosemary, or tarragon. Go by your taste.
