How do you make a healthy oat pancake with kefir in a pan? Prepare the ingredients for the oat pancake. It is better to use long-cooking oats, as they are more nutritious. I suggest a sweet filling version with cottage cheese, honey, and fruit.

How do you grind the oats for making the oat pancake? Grind the oats into a flour-like texture. The easiest way to do this is with a coffee grinder. But you can also use other kitchen appliances, such as a blender or chopper. You can leave the oats whole if you prefer, then the texture of the pancake will be a little different and crunchier. I usually make it with whole oats, but this time I decided to try the flour version. It is tasty both ways, so choose for yourself.

How do you make the batter for an oat pancake with kefir? Crack the egg into a bowl and lightly beat it with a fork. Add the ground oats, kefir, and baking powder. Mix everything until smooth. I would also suggest adding a tiny pinch of salt, especially if the filling will be sweet. A plain pancake works better for a savory filling. If you use whole oats, leave the batter to rest for about 20 minutes. The oats will swell, and the pancake will turn out tastier.

Which pan should you choose? It is most convenient to fry the pancake in a nonstick pan, then you will not need any oil at all. If you have a regular pan, grease it with a small amount of vegetable oil. Heat the pan. Pour the batter into the pan. Spread it out with a spatula. Keep the heat low.

How do you fry the oat pancake? Fry the pancake on one side, then turn it over to the other. Since the pancake contains only oat flour, it is very fragile. Be careful when turning it. But even if the pancake breaks, it will not affect the taste in any way.

How do you prepare the oat pancake for serving? Transfer the finished pancake to a plate. Put the filling on one side. Mine is cottage cheese. I drizzled honey over the cottage cheese and placed pieces of apricot on top. Carefully fold the pancake in half, covering the filling. Serve right away. The pancake tastes best while warm.
