Oat Kissel with Rolled Oats and Water

Step 1
How do you cook oat kissel from rolled oats in water? Prepare the ingredients. It is best to use yeast-free sourdough bread. It contains beneficial bacteria that will ferment the oats quickly and effectively.
Step 2
Pour warm water over the oats. The water should not be very hot, just warm. Water at this temperature works best on the bacteria, encouraging their growth. It is better to use glassware for fermenting the oats. Stainless steel will also work, but aluminum should be avoided because it reacts with acid. I used a glass jar. Add a piece of bread to the oats. Cover the jar with a cloth and place it in a warm spot.
Step 3
The next day, you will already see that fermentation has started. Bubbles will appear on the surface, and the mixture will develop the characteristic aroma of fermentation. Stir the mixture with a spoon and leave it to ferment for one more day.
Step 4
After 48 hours, pour the mixture into a sieve set over a saucepan. Wait until all the liquid has drained. You can press it a little from above with a spoon. The thick residue will no longer be needed, so it can be discarded.
Step 5
As a result, you will get a cloudy liquid. It tastes slightly sour.
Step 6
Place the strained liquid over low heat.

Cook the kissel over low heat, stirring constantly. Add a pinch of salt. It will gradually begin to thicken.
Step 8
When the mixture comes to a boil, it will become very thick. Wait until it reaches the consistency you like, then turn off the heat immediately.
