Oat Bread
The simplest, fastest, lightest, and healthiest bread - with no proofing needed! Oat Bread, baked according to old Finnish traditions, requires no kneading or rising - just mix and bake immediately. I was afraid it wouldn’t bake through, but it turned out wonderfully!

Preparation
Step 1
You can use any type of oats - quick or old-fashioned. However, bread made with old-fashioned oats will be fluffier and tastier. Even the cheapest oats will work fine. The amount of flour is approximate - you may need more or less than stated.
Step 2
Warm the water to about 104°F (40°C). Be careful not to overheat it - yeast are living organisms and will die in too hot water. Cold water, on the other hand, won’t activate them. The ideal temperature feels pleasantly warm to the touch. In a mixing bowl, add the oats, salt, and yeast (dry or fresh). Pour in the warm water and stir well.
Step 3
Cover the bowl with a towel and let sit for 20 minutes. During this time, the yeast should activate and form foam on top. The oats will swell and soften.
Step 4
Sift the flour beforehand - this removes impurities and adds air, making the bread lighter. Begin adding the flour to the oat mixture gradually, stirring after each addition. Stop as soon as the dough thickens. Too much flour will make the bread dense. (I used slightly less than the stated amount.)
Step 5
Take a baking form suitable for bread - metal, silicone, ceramic, or glass. Grease it with vegetable oil unless it’s silicone. My form is 20×9 cm (8×3.5 in). Spoon the dough into the form and smooth the top with a spatula.
Step 6
Place the form into a cold oven, then set the temperature to 225°C (435°F). Bake for 25-30 minutes. The bread will rise a lot, so leave room for expansion. The crust should be nicely golden brown.
Step 7
Remove the loaf immediately from the form and place it on a rack. Cover with a towel and let it cool completely. The crust will be hard at first but softens after being stored in a bag. Inside, the bread is tender and fluffy. Enjoy your meal!
