Number 1 Cake for a First Birthday

Preparation
Step 1
How do you make a Number 1 Cake for a girl’s or boy’s first birthday? Prepare the ingredients from the list. You can use eggs size large or medium. Floral honey works best.
Step 2
Cut the butter into pieces in a spacious nonstick saucepan and add the honey. Put the saucepan over the heat and melt everything together. Do not heat it until very hot.
Step 3
In a separate bowl combine the eggs with the sugar and lightly whisk them. There is no need to whip them, just mix them.
Step 4
Combine the melted butter, not hot, with the egg mixture and mix everything well. Then put the saucepan back on the heat and, stirring constantly, bring the contents to a boil.
Step 5
Remove the boiling mixture from the heat and immediately add the baking soda. Stir everything actively. The baking soda will react with the honey. The mixture will begin to foam and increase in volume. Set this honey mixture aside and let it cool until warm.
Step 6
Then add the sifted all-purpose flour to the honey mixture and knead the dough. You may need more or less flour than I did. So judge by the consistency of the dough.
Step 7
The dough will be slightly sticky to the hands. But do not rush to add more flour. There is no need to do that, because it will make the dough heavier. Cover the bowl with the dough and put it into the refrigerator for at least 1 hour.
Step 8
During this time the dough will cool completely, rest, and become easy to work with. It will no longer stick to your hands. Divide the finished dough into 3 parts and roll each one into a thin sheet.
Step 9
Cut the number 1 out of an A4 sheet of paper.
Step 10
Using this template, cut the number 1 out of the dough. Prick it all over with a fork so the dough does not puff up in bubbles while baking. Put the number into an oven preheated to 180°C (350°F) for 4-7 minutes, the time depends on your oven. Do not go far from the oven, the cake layers bake very quickly. Do not overbake the layer. It should become only slightly golden. Bake all the layers and cool them.
Step 11
To make the cream, combine the cream, at least 33% fat, with the powdered sugar and whip it into a fluffy cream. Then fold the room-temperature cream cheese into the cream.
Step 12
The finished cream will be quite thick.
Step 13
Using a piping bag, pipe the cream onto 1 cake layer. Cover with the second layer.
Step 14
Assemble the whole cake this way. Put it into a box with a lid and place it in the refrigerator for several hours so it can soak well without drying out. Why put it into a box? This is needed so that all the moisture from the cream does not evaporate, but is absorbed into the cake layers.
Step 15
After a few hours, decorate the cake to your taste. For decoration you can use candies, cookies, fruit, or berries. My decorating option turned out universal. But for a girl’s first birthday, the cake can also be decorated with pink cream by adding food coloring, and for a boy with blue or light green cream. Enjoy!
