No-Yeast Milk Cake
Simple but very tasty baking for a cozy tea time! This milk cake is baked without yeast, using baking soda or baking powder. You can add any berries or fruits. It’s easy to make and quick to bake for guests. It turns out incredibly fluffy with a delicate taste.

Step 1
How to make a no-yeast milk cake? Prepare the ingredients. For the cake to be fluffy and tasty, all ingredients should be at the same room temperature. Take the eggs and milk out of the fridge in advance. If you didn’t, warm the eggs in warm water and warm the milk in the microwave. Any berries or fruit will work; you can also use frozen. I used blueberries. Preheat the oven to 350°F (180°C).

Crack the eggs into a bowl. Start beating with a mixer on medium speed. When a light foam appears, add the sugar in portions, beating well after each addition. Add a pinch of salt. Once all the sugar is added, increase the speed. Beat until pale and fluffy, about 10 minutes.
Step 3
Then add the milk to the egg mixture in three additions. After each portion of milk, add part of the flour mixed with baking powder, sifting it through a sieve. Instead of baking powder, you can use baking soda quenched with lemon juice. Gently fold in the milk and flour so you don’t deflate the whipped mixture. You may need more or less flour - go by the consistency. The batter should be smooth and pourable, like thick yogurt.
Step 4
Take a suitable baking pan. I used a springform pan, 8 in (20 cm) in diameter. I lined the bottom with parchment and didn’t grease the sides. Pour the batter into the pan. Arrange berries or chopped fruit on top. Frozen fruit doesn’t need to be thawed. Press it slightly into the batter.
Step 5
Bake in a preheated 350°F (180°C) oven for 40-50 minutes. Exact time depends on your oven and the cake size (mine baked for 50 minutes). Check doneness with a wooden skewer - it should come out dry from the center. The top will brown nicely.
Step 6
Let the cake cool completely, then remove it from the pan. Serve. Enjoy!
