More than 1 hour.
Preparation
Step 1
Sort through the red and black currants, removing any leaves, stems and damaged berries.
Step 2
Rinse them, dry thoroughly and purée with a blender or process through a meat grinder.
Step 3
Transfer both berry purées to a suitably sized enameled, ceramic or glass bowl. Add the sugar, mix and leave at room temperature only until the sugar has completely dissolved, stirring every 30 minutes.
Step 4
Divide the finished no-cook jam among clean, completely dry glass jars for refrigeration or freezer-safe containers for freezing, then close tightly and refrigerate or freeze immediately. The recipe yields approximately 2.1 gallons of jam.
