Preparation
Step 1
Prepare all the ingredients. Leave the cookies in their package if you plan to crush them with a rolling pin. You can use coffee from a coffee machine or prepare strong instant coffee. The sugar is optional, as the cookies are already quite sweet.
Step 2
Prepare a small amount of strong coffee – a few tablespoons will be enough. Add sugar to taste and stir until dissolved. Leave the coffee to cool slightly.
Step 3
Crush the cookies into fine crumbs. You can crush them inside a sturdy package with a rolling pin, use a blender or place them in a strong food bag and crush them there. A few slightly larger pieces are fine, as they will soften after absorbing the coffee and cream cheese.
Step 4
Pour the cookie crumbs into a bowl. Add the coffee and cream cheese.
Step 5
Mix thoroughly with a spoon or your hands until all the ingredients are evenly combined. If the mixture still seems dry, add a little more coffee. It should become soft, pliable and easy to shape.
Step 6
Shape the mixture into balls about the size of a walnut. Place them in the refrigerator for 30 minutes.
Step 7
Pour the cocoa powder onto a plate. Roll each ball in the cocoa until evenly coated.
Step 8
Melt the chocolate in a microwave or over a double boiler. Transfer it to a piping bag or a sturdy food bag and cut off a very small corner. Drizzle thin lines of chocolate over the truffles.
Step 9
Return the finished truffles to the refrigerator for another 30 minutes, until the chocolate has set.
