Nachos
Loaded beef nachos layered with spiced mince, black beans, melted cheddar and fresh toppings, baked until gooey and served hot with classic accompaniments.

Preparation
Step 1
You will need lightly salted corn tortilla chips for this recipe.
Step 2
Heat the oil in a frying pan over a medium heat. Add the onion and cook for 3-5 minutes, stirring, until soft and translucent.
Step 3
Turn the heat up and add the beef along with the paprika, cumin and chilli powder. Cook for 5-10 minutes, stirring occasionally, until the beef is well browned.
Step 4
Lower the heat back to medium and gently stir in the black beans, cooking until they are heated through. Season with salt and pepper to taste.
Step 5
Preheat the oven to 200°C.
Step 6
Arrange a single layer of tortilla chips over the base of a 1.5-litre (2¾-pint) ovenproof dish or baking tray. Spoon over half of the beef mixture, followed by half of the cheddar and half of the cherry tomatoes. Add another layer of tortilla chips, then finish with the remaining beef and cheese.
Step 7
Place the dish in the oven and bake for 8-10 minutes, until the cheese has melted.
Step 8
Remove from the oven and scatter over the remaining cherry tomatoes. Additionally you can add green onions, coriander and chilli. Serve hot with soured cream, guacamole (if you like) and lime wedges on the side.
