Preparation
Step 1
Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners or lightly grease each cup with butter or oil.

In a large mixing bowl, mash the ripe bananas using a fork or potato masher until smooth and free of large lumps. Add the eggs, oil, honey, and cinnamon, then whisk thoroughly until the mixture is smooth and fully combined.

In a separate bowl, mix together the semolina, baking powder, and salt until evenly distributed. Gradually fold these dry ingredients into the banana mixture, stirring gently to combine. Take care not to overmix, as this can result in dense muffins.

If desired, fold in optional additions such as chocolate chips, chopped nuts, or raisins to enhance the flavor and texture. Add the flour mixture to the banana mixture and stir gently until just combined, again avoiding overmixing.

Spoon the batter into the prepared muffin cups, filling each one almost to the top.

Bake in the preheated oven for 20-25 minutes, or until the muffin tops are golden and a toothpick inserted into the centre comes out clean.
