Mint Muffins
Very quick, tasty, and fragrant muffins with fresh mint. Delicious, tender, soft, and aromatic mint muffins ready in just half an hour. The batter for mint muffins is made with milk, vegetable oil, and fresh fragrant mint.

Preparation
Step 1
Prepare all the ingredients. In this recipe it is better to use refined vegetable oil. The milk can be of any fat content. You may need a little more or a little less flour than the recipe states, depending on its quality. We will use only the mint leaves, not the whole sprigs.
Step 2
Pick the mint leaves off the stems, rinse them, and place them in a blender bowl. Add the vegetable oil. Blend until smooth to make mint oil. Preheat the oven to 180°C (350°F).
Step 3
Beat the eggs with the sugar until fluffy. The egg mixture should increase in volume by 2 to 3 times. Add the milk and the mint oil to the beaten eggs and sugar, then beat again well until smooth. Add the baking powder to the flour, mix well, and sift it into the other ingredients. Mix the batter, using either a mixer or a regular whisk. The batter will be fairly runny.
Step 4
Divide the finished batter among the muffin cups, filling them no more than 2/3 full. I usually get 12 to 13 pieces from a standard muffin pan. Bake the muffins in the oven at 180°C (350°F) for about 20-25 minutes. The baking time may vary depending on your oven, so judge by the muffins’ doneness. To check, insert a wooden skewer into the center of a muffin. It should come out clean and dry.

If you like, dust the cooled mint muffins with powdered sugar. The mint muffins are ready. Enjoy your meal!
