Step 1
How to make mini pancakes? Prepare the ingredients. There’s no sugar in the recipe because these pancakes are served with honey or syrup. If you have a sweet tooth, add 1/2 tablespoon of sugar. It’s best if the milk and other ingredients are warm (room temperature) so the batter mixes better and the pancakes taste better.
Step 2
Melt the butter in any convenient way (I melted it on the stove). Then let the butter cool.
Step 3
Pour the milk into a large bowl. Crack the egg into the milk. Add the melted butter. Whisk until smooth.
Step 4
In a separate bowl, sift the flour. Add the other dry ingredients: baking powder, baking soda, and salt. If you use sugar, add it here as well. Mix.

Add the dry mixture to the milk mixture. Whisk until you get a smooth batter.
Step 6
Transfer the batter to a container you can use to pipe onto the pan: a squeeze bottle with a nozzle, a sauce bottle, or a pastry bag.
Step 7
Heat a nonstick pancake/crepe pan. Lightly grease it with a small amount of vegetable oil. Pipe tiny pancakes onto the pan, about coin-size (about 1 inch / 2.5 cm).
Step 8
Fry them on one side, then flip to the other side. It’s easier to do with a fork or a toothpick.
